Description
An elegant and delicate Chablis Grand Cru
The origin of the name for the "Valmur" cuvée of Domaine Billaud-Simon still remains obscure today. Some say it refers to the “meuriers” (bramble) formerly growing on the plot. Others claim it is named after the “meurs” (walls) that delineated the property, sometimes formed by piles of pebbles from fields called "murgers" or “meurgers.” This Chablis Grand Cru is home to a plot of Chardonnay planted on a terroir of very stony clay and limestone colluvium soil on Kimmeridgian subsoil. The wine is aged for 15 to 18 months in stainless steel vats, then racked twice before being bottled at the end of the fermentation in autumn.
The Chablis Grand Cru "Valmur" 2015 of Domaine Billaud-Simon reveals a golden yellow colour with greenish reflections. Very fine on the nose, it develops a great freshness and a nice minerality, combined with aromas of candied lemon. The wine is elegant and delicate on the palate, offering a great aromatic complexity, with subtle touches of citrus. To keep until 2023-2031.
