Selected as France’s Best Young Sommelier at 21 years old, Hervé Bizeul fell in love with the magical landscapes of the majestic Cirque de Vingrau, at the foot of the Eastern Pyrenées in Roussillon. Restaurateur, writer and soil and vine enthusiast, Hervé Bizeul founded Domaine du Clos des Fées with his wife in 1997. Throughout the vintages, Domaine du Clos des Fées has become a major name among the finest labels in Roussillon wines. These exceptional cuvées express the uniqueness of their terroir of origin and seduce with their intensity and balance, all while showing a great ageing capacity.

The vineyard

A major name among Roussillon wines, Domaine du Clos des Fées oversees a 30-hectare vineyard spread across 112 plots, on a real mosaic of soils, managed through sustainable viticulture.

The wine

Produced in the Côtes du Roussillon Villages wine appellation, the De Battre Mon Cœur S’est Arrêté 2018 cuvée by Domaine du Clos des Fées is made from a fully south-facing plot, located on a hillside at 600 metres of altitude. Acquired in 2017, this approximately 3-hectare vineyard is unique thanks to its mineral, fertile and draining soil.

Winemaking and ageing

The vinification of this late-ripening plot focuses on preserving the fruit’s freshness and its aromatic richness. Quick fermentation with frequent pumping over. Maximum aeration. Vatting for 20 days with submerged cap. Early malolactic fermentation followed by moderate sulphurising. Successive stirrings before being aged in vats for 5 to 6 months.
