The estate
Founded in 1840 and taken over in 2003, Maison Simonnet-Febvre has become an essential reference among fine Chablis wines, Crémants de Bourgogne and Yonne wines. Simonnet-Febvre's wines are the fruit of a never-ending search for excellence and are recognised for their precise and mineral style, expressing the wide range of nuances of the Chablis terroirs.
The vineyard
Simonnet-Febvre's 2015 "Les Clos" is a Chablis Grand Cru wine that stems from 35 to 40 year old vines, planted on Kimmeridgian clay-limestone soils.
Vinification and ageing
The wine is vinified in second and third fill oak barrels, as well as aged for 15 to 18 months.
