The estate
Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot House embodies nearly two centuries of winemaking excellence in Burgundy. Now managed by Albéric Bichot, this family business brings together six exceptional estates covering a total of over 100 hectares of vineyards, including 13 hectares of Grand Crus and 26 hectares of Premier Crus. These estates include the prestigious Domaine Long-Depaquit in Chablis, which spans 65 hectares. As a pioneer of organic farming, the House offers the largest range of organic wines in Burgundy.
The vineyard
The vineyard of this Premier Cru from Chablis extends over 4.85 hectares on the left bank of the Serein. The vines, which are 46 years old on average, are rooted in a terroir of Kimmeridgian marl, covered by a predominantly clayey surface layer. This cuvée is the result of the blend of several Climats of the Vaillons hill, mainly the clayey Climat Les Epinottes, giving the wine great aromatic complexity.
Winemaking and aging
The grapes for this cuvée are harvested by hand and carefully sorted. After slow and gentle pressing at moderate pressure, alcoholic fermentation and aging on fine lees take place 90% in stainless steel tanks and 10% in 1- to 5-year-old oak barrels for 10 months. An additional aging period of 2 months in stainless steel tanks completes the process.
