Tasting
Color
The robe shows a deep ruby red, characteristic of the great Pinot Noirs of the Côte de Nuits.
Nose
The bouquet is intense and complex, revealing aromas of black fruits such as black cherry and blackcurrant, accompanied by notes of wild strawberries. Floral hints of violet and peony enrich the ensemble, while delicate spicy nuances and a perfectly integrated woody note round off this aromatic palette.
Palate

The estate
Founded in 1831 by Bernard Bichot in Monthélie, Maison Albert Bichot settled permanently in Beaune in 1912. Today managed by Albéric Bichot, the family business brings together six estates across Burgundy with over 100 hectares of vineyards, including 13 hectares of Grands Crus and 26 hectares of Premiers Crus. A pioneer in organic viticulture, the House today offers the largest selection of certified organic wines in Beaune. Its remarkable heritage includes Domaine Long-Depaquit in Chablis, whose origins date back to 1114, and Domaine du Pavillon in Pommard with its prestigious monopoles.
The vineyard
Clos de la Perrière is a historic monopole of about 5 hectares, planted in the 12th century by the monks of Cîteaux. Located in Fixin, between Dijon and Gevrey-Chambertin on the Côte de Nuits, this exceptional climat benefits from a south-east exposure at an altitude of between 350 and 380 meters. The brown limestone-clay soils give the wine its distinctive minerality and characteristic freshness. This high altitude, remarkable for Burgundy, explains the wine's natural liveliness. Although there are no Grands Crus in Fixin, this climat is often compared to the neighboring prestigious Chambertin due to its exceptional quality.
Winemaking and aging
Harvesting is done by hand, followed by strict sorting at the estate. Maceration and fermentation take place over a period of 18 to 21 days in temperature-controlled wooden vats. The Fixin 1er cru "Clos de la Perrière" Monopole 2019 is then aged for 16 to 17 months in oak barrels, 35 to 40% of which are new, allowing the wine to develop its complexity while preserving the pure expression of fruit and terroir.
