Description
Tasting Notes and Advice for Chanson’s Beaune 1er cru "Clos des Fèves" Domaine Monopole 2020
Tasting
Color
A deep ruby-red hue with garnet highlights dresses this wine, reflecting the vintage’s concentration.
Nose
The nose reveals fine aromatic complexity with notes of Burlat cherry and black fruits (blackcurrant, blackberry). Floral nuances of violet and peony mingle with spicy touches of licorice and black pepper. With aeration, tertiary aromas of undergrowth and mineral notes add an extra dimension.
Palate
The attack is supple and elegant. A full, silky palate unfolds flavors of red and black fruits, alongside chocolatey and lightly toasted notes. Perfectly integrated tannins provide structure and refinement. The very long, generous finish stands out for a streak of mineral freshness that brings balance and persistence.
Food and wine pairings
This Beaune 1er cru pairs perfectly with game meats such as pheasant or hare, as well as poultry in sauce. It also pairs elegantly with aged cheeses such as Époisses or Brillat-Savarin.
Serving and cellaring
It is recommended to serve the Beaune 1er cru "Clos des Fèves" Domaine Monopole 2020 at a temperature between 16 and 18°C. Decanting for one to two hours before serving will allow the wine to fully reveal its aromatic complexity. This wine can be enjoyed now but has aging potential until around 2034.
The elegance of a monopole Premier Cru in the heart of Beaune
The estate
Founded in 1750 in Beaune, Domaine Chanson is among the oldest Burgundy houses still in operation. Owned by the Bollinger group since 1999, it relies on a vineyard of around 88 hectares: 43 historic hectares in the Côte de Beaune, certified organic since 2024, complemented by 45 hectares in the Côte Chalonnaise acquired in 2023. Since 2025, Thierry Berger has been its Managing Director. Parcel-by-parcel vinification, sustainable viticulture, and aging in the historic Bastion define its identity.
The vineyard
Clos des Fèves is a 4.1-hectare monopole located mid-slope on the heights of Beaune. This Premier Cru enjoys an ideal east-facing exposure and lies on clay-limestone soils mixed with sand, offering optimal natural drainage. This privileged setting allows pinot noir to reach harmonious ripeness while preserving freshness and finesse.
The vintage
The 2020 vintage in Burgundy is marked by exceptional weather conditions. The hot, dry summer, punctuated by generous sunshine, encouraged remarkable concentration in the grapes. Harvesting began early on August 28, enabling fruit to be picked at optimal ripeness under perfect sanitary conditions. This sunny year produced wines that are both concentrated and balanced.
Vinification and aging
The grapes for Beaune 1er cru "Clos des Fèves" Domaine Monopole 2020 are harvested by hand and carefully sorted. After cold maceration, fermentation takes place in open vats for about two weeks. Aging is carried out in French oak barrels for 14 to 18 months, with a moderate proportion of new barrels, allowing harmonious oak integration and optimal tannin maturation.
