Colour
The colour reveals a bright, clear and luminous yellow hue.

Nose
The nose opens with delicate floral touches reminiscent of linden blossom and acacia. It then evolves towards aromas of white and yellow-fleshed fruit, blending citrus with subtle exotic notes.

Palate
The attack is lively and full of freshness. The palate stands out with lovely tension and pronounced acidity, revealing flavours of lemon and grapefruit, enriched by light nuances of honey and toasted almond on the finish.

Food and wine pairing

This white wine pairs beautifully with cold starters, quiches or egg-based dishes. It also enhances delicately prepared fish and shellfish, poultry in butter and herb sauces, as well as Asian cuisine. For a regional pairing, an aged Comté cheese would be an ideal choice.

Service and storage

For optimal tasting, it is recommended to serve the Arbois Chardonnay 2023 at a temperature between 9 and 12°C. This wine can be enjoyed now, but it will continue to develop and can be kept until around 2033.

The estate

Founded in 1942 by Désiré Rolet at the heart of the Arbois appellation, Domaine Rolet is a historic figure of the Jura vineyards. Spanning approximately sixty-five hectares, the estate has distinguished itself through its commitment to representing the full diversity of Jura's terroirs. Since 2018, the estate has been acquired by a consortium of investors led by Domaines Devillard, alongside the Flambert and Dupuis families. Now headed by Cédric Ducoté, the team carries on traditional expertise while bringing a modern dynamic, with a strong commitment to environmentally friendly practices.

The vineyard

The grapes come from the En Chagnon plot, located on the hillsides of the Arbois appellation. This distinctive terroir is composed of limestone soils mixed with rich gravel and grey Lias marls, giving the wine its mineral complexity. The vines, with an average age of forty-five years and grown from massale selection, are cultivated without herbicides or pesticides. The estate began converting to organic farming in June 2021, favouring deep soil work to preserve this steep environment.

The vintage

2023 was marked by cool climatic conditions, typical of this continental region. This climate allowed for a slow and measured ripening of the berries, helping to maintain lovely natural acidity and great freshness, despite the growing weather challenges such as spring frost and hail episodes that the vineyard has faced in recent years.

Winemaking and aging

The making of the Arbois Chardonnay 2023 relies on a meticulous approach combining tradition and modernity. Aging takes place over eight months. The vast majority of the wine, 70%, is aged in stainless steel tanks to preserve the purity of the fruit. The remaining 30% ages in oak barrels, 20% of which are new wood and 80% older barrels. A small proportion of this wine is aged under a veil of yeast, without topping up, bringing a subtle oxidative complexity typical of the region.
