Tasting
Color
Beautiful cherry-red color.
Nose
The nose reveals fruity fragrances (tangy small red berries, redcurrant, raspberry) with toasty notes.
Palate
A supple attack leads into a full-bodied palate, with silky tannins supported by generous fruity aromas (strawberry, wild cherry).
Serving and cellaring
For optimal tasting, it is recommended to serve this wine at a temperature between 10°C and 12°C. As this wine is slightly pétillant when opened, it is advisable to open it ahead of time. Due to light filtration, this cuvée may show a slight haze to the eye, which does not affect its quality. This Jura wine can be cellared until around 2027-2032.
Food and wine pairings
This cuvée pairs ideally with smoked charcuterie, a Morteau sausage en papillote with shallots, a pike quenelle, or eggs baked in ramekins.
An Arbois red wine marked by balance and aromatic richness
The estate
Since 1942 the Domaine Rolet, located in Arbois in the heart of the Jura vineyard, has carried on the family winemaking tradition by producing exceptional wines. Founded by Désiré Rolet, the estate was developed by his 4 children, who expanded the vineyard and modernized the facilities. In 2018, two families passionate about wine and the Jura region took over the estate, marking a new chapter in its history.
The vineyard
Domaine Rolet covers 65 hectares, including 55 hectares in production, spread across the 4 geographical appellations of Jura : Côtes du Jura (Le Vernois, Lavigny), Château-Chalon, l’Étoile and Arbois (Arbois, Montigny les Arsures). Benefiting from a mosaic of exposures ranging from southeast to northwest, the vineyard ensures optimal grape ripening and gives these Jura wines great aromatic richness. The clay-limestone soils, blue marls and limestone scree bring minerality and complexity to the wines. The semi-continental climate, with cold winters and hot, dry summers, promotes grape ripening and makes it possible to obtain balanced, elegant wines. The estate practices sustainable farming, respectful of the environment and biodiversity.
The wine
Poulsard Vieilles Vignes is an Arbois wine red made from vineyards located in Montigny-les-Arsures on the «Chagnon» and «Gaillard» plots at the bottom of the slopes, made up of clayey silts overlying Lias marls.
Winemaking and aging
Hand-harvesting and hand-sorting. Complete destemming. Maceration and fermentation for 15 days in tank. Winemaking with indigenous yeasts. Aged in tank for 12 months.
