Description
A fine white wine from the Cyclades with a mineral and complex character
The estate
Gaia Estate was founded in 1994 by Yiannis Paraskevopoulos, an agronomist from the University of Athens and a doctor in oenology from the University of Bordeaux III, and Leon Karatsalos, also an agronomist from the University of Athens. Both founders exemplify the Greek travelling spirit and the will to acquire a wealth of knowledge and experience, all characteristics that shine through their wines. Their aim is to offer the best possible result to wine lovers from all around the world. The project of the two founders is fuelled by the desire to set up vineyards in the two most prominent Greek wine regions, Santorini and Nemea, and to produce competitive high-quality wines.
The vineyard
Gaia Estate's vineyard lies in the heart of the Santorini appellation. Wild Fermented Assyrtiko 2020 is made from 70 to 80-year-old vines planted between 50 and 250 metres above sea level.
Winemaking and ageing
Before fermentation, the grapes were in contact with their skins for 12 hours at a temperature of 10 degrees. Then, a natural fermentation process with indigenous yeasts was carried out. 45% of the wines were fermented in stainless steel tanks at a temperature of 16-18 degrees and 45% in oak barrels at a temperature of 18-28 degrees. The remainder of the wine fermented in ceramic sphere-shaped vessels. The wine was aged for 4 months in stainless steel tanks and oak barrels with regular stirring.
