Characteristics and Tasting Tips for L'Héritage de Chasse-Spleen 2023
Food and wine pairing
L'Héritage de Chasse-Spleen pairs beautifully with grilled or roasted red meats, such as grilled beef or rack of lamb, as well as with well-structured poultry. It is also a delightful match for mushroom-based dishes, such as a wild mushroom risotto, a charcuterie platter, or mature cheeses like Comté or Gruyère.
A second wine of Château Chasse-Spleen from the Haut-Médoc appellation
The estate
The name Château Chasse-Spleen first appeared in 1863, when Rosa Ferrière chose it to distinguish her wine, in the context of the London Universal Exhibition. Located in Moulis-en-Médoc, in the Bordeaux region, the estate is now run by Céline Villars-Foubet, alongside Jean-Pierre Foubet. Classified as a Cru Bourgeois Exceptionnel, Château Chasse-Spleen has grown over the decades while committing to a sustainable and responsible approach to viticulture.
The vineyard
L'Héritage de Chasse-Spleen comes from plots classified under the Haut-Médoc appellation, where the estate farms approximately 20 hectares of vines. Planted at a density of 8,300 vines per hectare, they range from 5 to 35 years old and are rooted in sandy-gravelly soils over clay-limestone subsoils and clay over limestone, a composition similar to that of the great gravel mounds of the Médoc.
Vinification and ageing
The vinification of L'Héritage de Chasse-Spleen 2023 takes place in temperature-controlled stainless steel and concrete tanks, following a rigorous grape sorting. The wine is then aged entirely in barrels, of which only 5% are new, in order to preserve the freshness of the fruit and the finesse of the tannins rather than favour a pronounced oaky character.
Grape varieties
The blend of L'Héritage de Chasse-Spleen is based on the traditional grape varieties of the Médoc, namely Cabernet Sauvignon, Merlot and Petit Verdot, which respectively bring structure, roundness and aromatic complexity to this second wine of Château Chasse-Spleen.
