A Chablis Village combining freshness and aromatic richness
The estate
Founded in 1923 through the initiative of Abbé Balitrand, the cooperative winery La Chablisienne is today established as the leading producer of Chablis wines. From Petit Chablis to Chablis Grands Crus, through Chablis and Chablis Premiers Crus, not forgetting the prestigious cuvées of Château Grenouille, La Chablisienne offers around thirty different cuvées and crus, giving enthusiasts the opportunity to explore the full diversity of Chablis wines.
The vineyard
The cuvée « Les Vénérables » comes from vines located across the appellation Chablis. These old vines, averaging 50 years of age, thrive on Kimmeridgian clay-limestone soils typical of the region.
Winemaking and aging
After static cold settling, alcoholic and malolactic fermentations take place in tank. This Chablis Village is then aged for about 12 months on fine lees, both in tanks and barrels, to bring complexity and finesse.

Tasting
Color
The color shows a pale gold hue enhanced by silvery reflections, clear and bright.
Nose
The first nose reveals subtle woody notes reminiscent of toasted bread and hazelnut, to which are added, after airing, fruity and lemony aromas. This bouquet stands out for its freshness and elegance.
Palate
On the palate, the attack is lively, marked by lovely freshness and expressive minerality. The palate, both balanced and broad, reveals a pleasant density. The finish extends with notes of dried fruit, bringing length and persistence to the whole.
Food pairings
Ideal as an aperitif, this white wine from Burgundy pairs wonderfully with sushi or a cheese platter (Brillat Savarin, fresh goat cheese).
