The Estate
Since its establishment in 1959, the Domaine William Fèvre has established itself as a key figure in the Chablis region. Driven by an unwavering quest for quality and authenticity, this prestigious Burgundian estate joined the Henriot group in 1998, further cementing its influence on the international wine scene.
Boasting a 78-hectare vineyard, of which 15.9 hectares are classified as Premier cru and 15.2 hectares as Grand Cru, Domaine William Fèvre tends to a mosaic of plots with distinct identities, revealing the full complexity of Chablis soils.
The Vineyard
"Beauroy" is a Chablis Premier cru wine from a 1.12-hectare plot in the lieu-dit Troësmes, prized for its ideal south/southeast exposure and its high-quality contribution to the region’s great Premier Crus.
The vines rest on typical Kimmeridgian soils, composed of marls and clayey limestones, rich in minerals and marine fossils, notably oysters. This unique geological signature imparts to this vin de Bourgogne its intense minerality and seductive structure.
The Vintage
The 2023 vintage experienced contrasting weather with a mild winter, harmless frosts, and a summer alternating between heat and rainfall. Despite significant sanitary pressure in June, well managed by the teams, the September harvest yielded generous volumes and grapes in excellent condition.
Winemaking and Aging
This Chablis 1er cru is produced using a gentle approach, with gravity-driven vinification without pumping and a short pneumatic pressing. After a slight settling, fermentations occur naturally in stainless steel tanks, followed by an 18-month aging period, of which 5 to 6 months are on fine lees in French oak barrels for 25 % of the cuvée. The end of the aging takes place in stainless steel tanks.
