Description
An aromatic and elegant Chablis Premier cru by William Fèvre
The estate
Created in 1959, the William Fèvre estate has become, over the course of each vintage, an essential reference for Burgundy wines. One of the biggest proprietors in Chablis today, the estate joined the Henriot group in 1998.
The William Fèvre estate overlooks an exceptional terroir of 78 hectares of vines, including 15.9 hectares classified as Premier Crus and 15.2 as Grand Crus. Certified HVE (High Environmental Value) since 2015, this vineyard magnifies, through its mosaic of over 90 different plots, all of the richness and diversity of the Chablisian terroir.
The vineyard
This Chablis Premier Cru "Fourchaume" Domaine 2018 by William Fèvre is produced from a 3.63-hectare vineyard located on the the hillsides of the right bank of the Serein. Facing south/south-west, the vines are planted on soils made up of marl, giving the wine a lively minerality which is typical to the appellation.
Winemaking and ageing
The grapes are manually harvested and placed in gravity-fed tanks. A short, pneumatic pressing is followed by a light, static settling. Alcoholic and malolactic fermentation are carried out for 40 to 50% of the musts in French oak barrels, aged by 6 years on average, as well as in small, stainless steel vats for the rest of the harvest. Ageing lasts for 13 to 14 months, of which 5 to 6 months are on fine lees, in the same containers as the fermentations.
