The Estate
Founded in the 19th century, the Domaine William Fèvre, located in Burgundy, expanded significantly in 1959 under the leadership of William Fèvre, growing from 7 to 78 hectares, including 15.9 in Premier Cru and 15.2 in Grand Cru. In 2024, it was acquired by DBR Lafite, further enhancing its prestige. Situated in Chablis on a Kimmeridgian terroir, the estate is distinguished by its Chardonnay wines of exceptional minerality. The first Chablis estate certified High Environmental Value in 2014, it combines tradition and innovation in its viticultural practices.
The Vineyard
The climat "Les Lys" is located on the left bank of the Serein, within the Vaillons Premier Cru in Chablis. This 0.99-hectare plot, out of a total of 12 hectares, benefits from an especially favorable east-facing exposure. The soil, consisting of a clayey slope over a Kimmeridgian subsoil rich in marls and clayey limestones, gives this white wine from Burgundy its characteristic minerality and remarkable finesse.
The Vintage
The 2023 vintage experienced a contrasting climate with a mild winter, harmless frosts, and a summer alternating between heat and rain. Despite significant sanitary pressure in June, well managed by the teams, the September harvest delivered generous volumes and grapes in excellent condition.
Winemaking and Aging
This Chablis 1er cru is produced using a gentle approach, with gravity-fed vinification without pumping and brief pneumatic pressing. After light settling, fermentations occur naturally in stainless steel tanks, followed by an 18-month aging period, including 5 to 6 months on lees in French oak barrels for 30 % of the cuvée. The final part of the aging is carried out in stainless steel tanks.
