Nose
Expressive, the nose reveals aromas of fruit (blackberry, strawberry), spices, as well as hints of tea and cocoa.

The complexity and balance of a red Burgundy wine

The estate

While the origins of the Bichot family date back to 1214, it was in 1350 that they settled in Burgundy. The merchant house founded in Monthélie in 1831 by Bernard Bichot experienced remarkable development in the 19th century, notably becoming the official supplier to the Court of Sweden. Independent and family-owned, Albert Bichot is among the great references that shape the vineyard and the influence of Burgundy wines. Since 1996, the 6th generation has been leading the company, skillfully combining modernity and tradition.

The Albert Bichot House now oversees more than 100 hectares of vines, from north to south of Burgundy, divided into 6 exceptional estates: Domaine Long-Depaquit in Chablis (Yonne), Domaine du Clos-Frantin and Château Gris in Nuits-Saint-Georges, as well as Domaine du Pavillon in Pommard. Dedicated to the wines of Mercurey, Domaine Adélie was acquired in 2013 and pays tribute to the first name of Albert Bichot's daughter, born in 2003, thus perpetuating the family legacy. The superb Domaine de Rochegrès, in the Moulin-à-Vent appellation, joined the House in 2014.

The vineyard

The name "En Mareschaut" derives from the Old French "Maresche" (marsh). Close to the source of the Lauve, the lower part of Aloxe-Corton and Ladoix-Serrigny was once marshy. The gradual drainage of the land, thanks to extensive drainage work, allowed the planting of the first vines.

The "Clos des Maréchaudes" Domaine du Pavillon by Albert Bichot is an Aloxe-Corton 1er cru from a monopole of Domaine du Pavillon. This 1.4-hectare parcel, whose vines are 30 to 40 years old, rests on brown limestone soils on scree, less clayey and slightly deeper than those of the Grand Cru zone.

Vinification and aging

Hand-harvested, the grapes are vinified in temperature-controlled conical oak vats. Vatting lasts 20 to 28 days. Aging takes place in oak barrels, 25% to 40% of which are new barrels, for 14 to 18 months.
