Tasting notes
Appearance
This wine reveals a beautiful pale yellow colour, clear and bright, adorned with delicate golden highlights.
Nose
Particularly expressive and impressively powerful, the bouquet opens on a deeply mineral framework with iodine and gunflint accents. It then reveals aromas of ripe fruit such as pear, harmoniously blended with subtle touches of milk caramel, vanilla and sweet spices from a very elegant oak ageing.
Palate
The attack offers a pleasant sensation of sweetness, revealing indulgent flavours of apricot, quince and candied fruit. The texture is full-bodied and concentrated, while retaining great energy. The finish lingers, carried by a tangy freshness and a mouth-watering minerality.
Food and wine pairing
Ideal for whetting the appetite as an aperitif, this white wine also pairs wonderfully with refined dishes. It will enhance seafood, such as fish or shellfish in sauce, as well as dishes combining grains with iodine-rich flavours. It also pairs brilliantly with creamy white meats or a delicious mushroom and truffle risotto.
Serving and cellaring
The Chablis 1er Cru "Les Vaucopins" Dom. Long-Depaquit 2022 is best enjoyed at a temperature between 11 and 13°C. Although it can be appreciated in its youth for its liveliness, it also possesses excellent ageing potential and can be cellared until 2032.

The estate
Founded in 1831 in Beaune, at the heart of Burgundy, the House of Albert Bichot is a historic, independent family business. Now led by Albéric Bichot, representing the sixth generation and current owner, this renowned name shines through several prestigious estates. Among them, Domaine Long-Depaquit, acquired in 1968, perfectly illustrates the group's environmental commitment with its Level 3 High Environmental Value certification. Combining the tradition of négoce with hands-on estate management, the House strives to reveal the unique identity of each Burgundian terroir through sustainable and respectful viticulture.
The vineyard
The Vaucopins plot spans 5.2 hectares on the right bank of the Serein, within the commune of Chichée, not far from the village of Chablis. This exceptional terroir, often compared to that of the grands crus, benefits from a full south-facing exposure and a steep slope favouring optimal sunlight. The vines, averaging 31 years of age, thrive on clay-limestone soils resting on a subsoil of Kimmeridgian marl, rich in marine fossils. This distinctive geology gives the grapes remarkable concentration and a profoundly saline identity.
Winemaking and ageing
Following a manual harvest to preserve the integrity of the berries, the Chablis 1er Cru "Les Vaucopins" Dom. Long-Depaquit 2022 undergoes meticulous winemaking. This takes place 85% in stainless steel tanks and 15% in oak barrels aged between one and four years. The wine is then aged on fine lees for ten months in the same vessels. Finally, the blend is brought together for a final two-month maturation period in stainless steel tanks, allowing the cuvée to harmonise while preserving its original freshness.
