Appearance
This wine reveals a deep, luminous ruby robe, enhanced by delicate raspberry highlights.
Nose
The aromatic bouquet is complex and intense, releasing scents of ripe red fruits such as cherry and raspberry. These fruity notes harmoniously intertwine with spicy touches and a toasted oak character with smoky nuances, all perfectly integrated.
Palate
Ample, fleshy and generous, the palate offers a rich and dense texture. It is supported by an elegant structure with refined, powdery tannins, leading into a finish of remarkable length.
Food and wine pairings
This cuvée pairs wonderfully with roasted meats or dishes prepared in sauce, such as beef, pork, duck or game. It also enhances cheeses of medium to strong character. For a perfect match, opt for a beef tenderloin coated with Périgueux sauce.
Serving and cellaring
It is recommended to serve Pommard 1er Cru "Les Rugiens" Dom. du Pavillon 2023 at a temperature between 16 and 17°C. Endowed with excellent potential, this cellaring wine can be enjoyed until around 2030, and even beyond.

The estate
Founded in 1831 by Bernard Bichot, Albert Bichot is a historic House based in Beaune, at the heart of Burgundy. Today, Albéric Bichot, representing the sixth generation of the family, runs the estate with passion. The brand oversees a vast vineyard of more than 100 hectares spread across six exceptional estates. A true pioneer, the company stands out for its strong commitment to sustainable and organic viticulture, thus offering cuvées that express with great purity the unique identity of each Burgundian terroir.
The vineyard
Located south of the village of Pommard, this 0.33-hectare plot benefits from an exceptional terroir. The vines, on average 35 to 40 years old, thrive on brown-red soils, particularly rich in hard limestone. The entire vineyard is cultivated according to the demanding principles of organic farming.
Winemaking and aging
After a manual harvest, the grapes undergo rigorous sorting upon arrival at the winery. The fermentative maceration of Pommard 1er Cru "Les Rugiens" Dom. du Pavillon 2023 then takes place in temperature-controlled wooden vats for 18 to 21 days. Finally, the wine benefits from careful aging in oak barrels for 14 to 16 months, including a proportion of 25 to 35% new barrels, following a respectful and minimally interventionist approach.
