Description
The elegance and freshness of a Burgundy white wine
The estate
As the daughter of one of the greatest wine-producing families in Burgundy, Francine Picard took over the estate historically held by her father at the end of the 1990s. The Domaine Au Pied du Mont Chauve stretches across the communes of Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin, in the heart of the most beautiful climates and terroirs of winegrowing Burgundy.
In a desire for synergy between the land and the wines, Francine Picard cultivates her plots of land in accordance with the principles of biodynamics and applies herself with passion and extreme care to produce wines that reflect the identity of their terroir.
From a vineyard of 110 hectares worked in "agroecology," the Chardonnay and Pinot Noir of the Domaine Au Pied du Mont Chauve are recognised for their quality, their precision and their elegance.
The vineyard
This Chassagne-Montrachet wine is made from vines planted in the middle of a slope on brown soil rich in white limestone. This very steep vineyard area is almost bare, causing water stress during hot periods.
Winemaking and ageing
The grapes were pneumatically pressed before being transferred to stainless steel tanks for a 12-hour settling period at room temperature. The must was placed directly into barrels for alcoholic fermentation. This took place over a period of one month, in 20% new barrels and 80% barrels of 1 to 3 wines. The wine was aged for 12 months. The wine was then transferred to wooden vats to finish aeing for 4 months. A light filtering was done before bottling.

Tasting
Colour
The wine has a beautiful, shining golden colour with subtle green highlights.
Nose
The nose gives off floral (white flowers) and citrus notes, followed by a subtle buttery scent.
Palate
Fresh and elegant, the palate entices with its wonderful acidity.

This wine goes perfectly with scallops, pike-perch or marinated turkey.
Storage
The Chassagne-Montrachet Premier Cru "Les Chaumées" 2015 can be laid down until around 2025.
Service
For the best tasting, it is recommended to serve this wine at 12°C.
