A Chablis Premier Cru with Ripe Citrus and White Flower Fragances

The Chablis Premier Cru "Les Vaillons” of Billaud-Simon is a white Burgundy wine, coming from a 2.95-hectare plot in the Chablis appellation. Its name "Les Vaillons" references the location of the plot in a valley. Here, the Chardonnay vines grow in stony clay-limestone soils, layered over Kimmeridgian subsoils. The wines age for 14 to 16 months in stainless steel vats, and are then sometimes transferred into oak barrels. The wine is racked twice before it is bottled, towards the end of the fall. A vintage characterised by challenging weather conditions, 2016 produced concentrated, powerful and very smooth wines that are intensely aromatic and perfect to pair with food.

The Chablis Premier Cru "Les Vaillons" 2016 of Domaine Billaud-Simon presents in the glass a bright, clear hue with golden highlights. On the nose, this wine is remarkably complex, developing ripe citrus aromas and white flowers fragrances. On the palate, this Burgundy white wine offers a lively attack, followed by a round and seductive texture. The length is quite exceptional, with an intense aromatic persistence of great purity.
