Tasting
Colour
The wine displays a beautiful deep ruby-red colour with garnet highlights.

Palate
The attack is broad and generous. The palate unveils flavours of liquorice and blackcurrant, carried by elegant, silky tannins. The finish stands out for its fine aromatic persistence.

This Volnay 1er Cru pairs perfectly with veal rib chops in a cream and morel sauce. It also elegantly accompanies feathered game birds such as pheasant or quail.

The estate
Founded in 1731 in Beaune by Michel Bouchard, Bouchard Père & Fils is one of Burgundy’s oldest and most prestigious houses. Today, the estate covers 98.7 hectares across 77 climats in the Côte d'Or, with over 75% classified as Premier Cru and Grand Cru. Owned by Artémis Domaines since 2022, the estate has focused exclusively on its vineyards. Certified organic since 2025, it is committed to moving towards biodynamics.
The vineyard
The climat "En Chevret" is located at the lower boundary of the Volnay appellation, close to Meursault. This 6.35-hectare terroir benefits from an ideal south-easterly exposure. The clay-limestone soils rest on a limestone subsoil, providing excellent drainage. Bouchard Père & Fils owns 2.30 hectares of vines here, with an average age of 25 years. The grapes are harvested by hand.
The vintage
The 2019 vintage is recognised as one of the most remarkable of the decade in Burgundy. The year was marked by climatic contrasts: an icy spring followed by a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and periods of drought. These conditions produced grapes with optimal concentration in sugars, extracts and acidity, thanks to an ideal skin-to-juice ratio.
Winemaking and ageing
After hand-harvesting, the Volnay 1er Cru "En Chevrets" Domaine 2019 is vinified in traditional open-top vats. Malolactic fermentation is complete. Ageing takes place for 10 to 12 months in French oak barrels from the Louis Latour cooperage, with a medium toast. The proportion of new barrels is 35%, with the remainder made up of one-wine barrels.
