An intense and generous red Corbières from Languedoc
The estate
Founded in 1921 in the heart of the Corbières appellation in Languedoc, the Cave de Castelmaure today brings together 54 winegrowers cultivating 450 hectares of vines. This century-old cooperative stands out for its exclusively manual harvesting and its mastery of carbonic maceration. It preserves an exceptional conservatory of 218 clones and has benefited from a partnership with the Maison Jeanjean since 1985.
The vineyard
The vines of this cuvée thrive on schist and limestone soils typical of the Corbières appellation.
Winemaking and aging
Following manual harvesting, the winemaking of the N°3 de Castelmaure 2022 uses differentiated techniques depending on the grape varieties. The Syrah is vinified as whole bunches with a cold pre-fermentation maceration, followed by carbonic maceration at low temperature to enhance the fruity aromas. The Grenache benefits from traditional maceration. Aging takes place for 12 months in French oak barrels, 25% of which are new wood.
Grape varieties
73% Syrah, 26% Grenache and 1% Carignan.
