The estate
Founded in 1959 by Alex Roten, Caves du Paradis is an iconic family-owned estate located in the heart of Valais, Switzerland. Spanning a vineyard of around ten hectares, this institution has succeeded in preserving its heritage while looking toward the future. Now led by Olivier Roten, representing the third generation, the estate stands out for its deep commitment to sustainability. The property skilfully combines technical precision with respect for alpine traditions to reveal the authenticity of its terroirs.
The vineyard
Located in the Valais region, the vineyard flourishes on the steep terroirs of the villages of Sierre, Miège, and Salquenen. Benefiting from nearly three hundred days of sunshine a year and cool nights at altitude, the vines grow on complex soils. This geographical setting gives the grapes optimal ripeness and a distinctive mineral character.
The vintage
The year 2023 was marked by specific weather conditions in the region. Heat accumulation, temperature variations between day and night, and the pattern of rainfall all played a decisive role in vegetative growth, directly influencing the ripening of the berries and the evolution of their acidity.
Winemaking and aging
The creation of this red wine is based on a philosophy of minimal intervention combined with great technical precision. After a rigorous selection of the grapes at harvest, fermentation is carried out with strict temperature control. The post-fermentation stages are then handled with great care to preserve all the subtlety of the aromatic compounds.
