Tasting
Color
A delicate pale pink hue enhanced by fine, persistent bubbles.
Nose
Wonderfully intense, it reveals aromas of tart cherry and pomegranate, lifted by an original touch of sweet spice reminiscent of ginger.
Palate
The palate is dominated by red fruit flavors such as strawberry and raspberry, accompanied by notes of pink grapefruit and toasted gingerbread. The texture offers a silky mousse, extending into a long, saline, mineral finish that is deeply mouth-watering.
Food and wine pairing
This cuvée pairs wonderfully with salmon-based dishes, sushi or grilled shrimp thanks to its saline finish. It also perfectly accompanies grilled poultry, duck, creamy cheeses, as well as delicate desserts such as fruit tarts.

The elegance of a rosé Champagne by Gonet-Medeville
The estate
Founded in 2000 by Xavier Gonet and Julie Medeville, this family-owned estate is ideally located in Bisseuil, at the heart of the Champagne wine region. The estate spans 12 hectares of vines spread across several prestigious villages. Today, Xavier and Julie still run the estate, combining their respective heritages to create exceptional wines. Working with respect for the environment through sustainable, organic and biodynamic practices, they have established themselves as an essential benchmark for lovers of terroir-driven cuvées.
The vineyard
The grapes for this Champagne cuvée come from a confidential one-hectare plot spread across the terroirs of Bisseuil, Ambonnay and Le Mesnil-sur-Oger. The vines thrive on typically chalky soils. The vineyard work is meticulous, with harvesting carried out entirely by hand and an average, carefully controlled yield.
Winemaking and aging
The creation of this Premier Cru Brut Rosé begins with careful pressing and settling. Vinification takes place entirely in old oak barrels. Bottling occurs seven months after the harvest. The wine then undergoes an extended aging period of 36 months on the lees. Finally, it is only released after a minimum rest of twelve months following disgorgement. This sparkling wine has a very low dosage of 3 g/L, placing it in the extra brut category.
Blend
Produced according to the assemblage method for rosé, this cuvée blends still wines with a small proportion of still red wine from the Ambonnay plots. It is composed of 70% Chardonnay, 27% Pinot Noir and 3% red wine from Ambonnay.
