Tasting Notes
Appearance
This wine reveals a magnificent golden-yellow color, both deep and brilliant.
Nose
Intense and remarkably complex, the bouquet offers generous aromas of ripe and candied fruit, jam and vanilla-scented biscuits, subtly enhanced by notes of sweet spices and honey.
Palate
Sweet, round and full-bodied, it reveals a rich and elegant texture. The whole is perfectly balanced by a beautiful acidity that supports the wine's volume. The finish is wonderfully smooth, lingering with fruity, spicy and menthol touches.
Food and Wine Pairings
This great sweet wine pairs wonderfully with foie gras, white meats served with a cream and mushroom sauce, or blue-veined cheeses. It also enhances fruit-based desserts and can be daringly paired with lightly spiced Asian cuisine.
Serving and Cellaring
It is recommended to serve this 2000 vintage at a temperature between 10 and 12°C, opening it gradually one hour before tasting. Endowed with exceptional longevity, it has the structure needed to age in the cellar for several more decades.
An Exceptional Sauternes from Château d'Yquem
The Estate
Located at the highest point of the Sauternes appellation in the Bordeaux region, Château d'Yquem's vineyard began to take shape as early as 1593 under the impetus of the Sauvage family. The only Premier Cru Supérieur classified in 1855, this legendary estate now belongs mostly to the LVMH group. The property spans approximately 126 hectares. A true luxury brand with international renown, Yquem stands out for its absolute demand for excellence, not hesitating to sacrifice entire harvests to maintain the unrivaled quality of its wines.
The Vineyard
Rising to around 80 meters in altitude, the Sauternes terroir benefits from a unique microclimate. The meeting of the Garonne and the Ciron creates the morning mists essential to the development of noble rot. The vines grow on a mosaic of soils combining gravel, clay, sand and limestone. The estate, committed to organic farming, maintains extremely low yields to ensure maximum aromatic concentration.
The Vintage
The year was overall warmer than average, with a very rainy spring followed by a particularly dry end of summer, causing water stress and early physiological ripening from the beginning of September. Harvesting began very early, on September 12th. After two complete selective pickings that yielded highly concentrated grapes, heavy rains in October destroyed the rest of the crop. Although the yield was very low, with around 80% of the production lost, the quality of the grapes that were saved is truly remarkable.
Winemaking and Aging
The grapes are meticulously harvested through successive selective pickings to select only the perfectly botrytized berries. At the winery, they undergo several pressings to extract the richest juices. Fermentation takes place naturally through indigenous yeasts. Aging takes place in new French oak barrels over an extended period, allowing the structure to refine and its oaky notes to integrate elegantly.
Grape Varieties
This wine comes from a blend dominated by Sémillon (approximately 75 to 80%), complemented by Sauvignon Blanc (approximately 20 to 25%).
