Description
During this exceptional yet complicated vintage - according to the property - the harvest took place from October 6th for Merlot to October 13th for the Cabernets. Chateau Dalem made the most of the advantages of this vintage by making intelligent, even innovating choices. Indeed, this wine was, as an experience, vinified in egg-shaped tanks and a part of this wine's ageing process was made on fine lees for 6 months (a method usually used for dry white wines). This technique brought thickness and creamy structure to this Fronsac. It displays an inky red colour with blue highlights. The nose offers character and opens up on spicy notes (pink peppercorn) which lead to a large aromatic palette of juicy and fleshy dark berries (cherry, smashed blackberry). A beautiful sensation of balsamic freshness (cedar) appears and confers aromatic balance to the wine. The palate offers both strength and finesse on straight tannins, more marked on the mid-palate, almost creamy on the finish. The black fruit is persistent and confirms the vibrancy of the fruit already felt on the nose. This remarkable 2015 Chateau Dalem is 80% Merlot and 20% Cabernet Franc.
