Colour
The colour reveals a deep red hue, adorned with intense brilliance.

Nose
The bouquet opens with luscious aromas of ripe red fruit, dominated by cherry, before revealing subtle spicy notes and hints of liquorice.

The palate seduces with its remarkably delicate texture and elegance. The tannins, perfectly balanced, harmonise with a vibrant acidity that supports the brightness of the fruit. The finish lingers at length, enhanced by a saline note reminiscent of the terroir's minerality.

Food and wine pairing

This red wine pairs wonderfully with roasted meats, slow-cooked poultry dishes, or charcuterie specialities such as a pâté en croûte. It will also beautifully complement soft regional cheeses such as Langres, Citeaux, or Brillat-Savarin.

Service and storage

To fully appreciate this Mercurey 1er Cru "Clos l'Évêque" 2022, it is recommended to serve it at a temperature between 15 and 16°C, taking care to decant it an hour before tasting. Built for aging, this wine can be cellared and will develop favourably until around 2042.

The elegance and depth of a Premier Cru from Mercurey

The estate

Built in the early 18th century, Château de Chamirey stands as an emblematic figure of the Burgundy wine region, located at the heart of the Côte Chalonnaise. Although its lands have been home to vines since the 12th century, its modern winemaking history truly began in 1934 with the first estate bottlings. Today, Amaury and Aurore Devillard, representing the fifth generation, lead the estate. They continue to uphold a philosophy centred on the purity of fruit and the authentic expression of terroir, producing wines celebrated for their outstanding quality.

The vineyard

This wine comes from the prestigious Premier Cru "Clos l'Évêque", located within the Mercurey appellation. The plot cultivated by the estate spans just over two hectares, benefiting from a beautiful east and southeast-facing exposure. The vines, planted between 1986 and 2013, thrive on light, particularly calcareous soil dotted with small stones that promote excellent drainage. The estate follows the principles of sustainable viticulture, with meticulous attention paid to the vines and harvests carried out entirely by hand.

The vintage

The year 2022 stood out for its particularly warm and sunny weather, marked by notable drought. Following a mild winter, spring brought gentle temperatures that encouraged early flowering in May. Summer was punctuated by alternating spells of intense heat and thunderstorms, before scorching temperatures set in at the end of August. Fortunately, timely rainfall during that same month allowed the berries to complete their ripening under optimal conditions, resulting in a generous and high-quality harvest.

Winemaking and aging

The grapes destined for this Mercurey 1er Cru "Clos l'Évêque" 2022 are carefully sorted, then fully destemmed. A cold pre-fermentation maceration is carried out over several days to gently extract colour and aromas. Fermentation then begins under the action of indigenous yeasts, accompanied by regular punching down of the cap over about fifteen days. After separating the free-run juice from the press wine, the wine undergoes twelve months of aging exclusively in traditional 228-litre Burgundian barrels, a small proportion of which are new oak.
