Food and Wine Pairings
This white wine pairs beautifully with noble fish in a butter sauce, as well as shellfish such as lobster or crab. It is also an excellent match for white meats and poultry in cream sauce, and sits naturally alongside emblematic dishes of Burgundian cuisine such as snails, pike quenelles or poultry with morels.
Serving and Cellaring
The Mercurey 1er Cru "La Mission" Monopole 2024 will be at its best served in a glass large enough to allow its aromas to express themselves fully, at a slightly cool temperature of around 12 to 14 °C. As the wine has not yet been bottled at this stage, no cellaring recommendation can be given for this vintage at present.
A White Mercurey Premier Cru from the Château de Chamirey Monopole
The Estate
The Château de Chamirey, an 18th-century building overlooking the village of Mercurey, has been a wine estate since 1934, when the Devillard family founded its viticultural activity. Today the family continues to run the estate through Amaury and Aurore Devillard. Located in the Côte Chalonnaise, in Burgundy, the estate covers 37 hectares, 15 of which are classified as Premiers Crus. Its singularity lies notably in its ownership of two monopoles, "Les Ruelles" for red and "La Mission" for white, which illustrate the diversity of the appellation's terroirs.
The Vineyard
The "La Mission" climat is a parcel classified as Premier Cru within the Mercurey appellation, farmed as a monopole by Château de Chamirey. Set on a hillside overlooking the Premier Cru "Clos du Roi", it benefits from an east/south-west exposure that favours gradual ripening of the grapes. The clay-limestone soils, predominantly limestone and occasionally mixed with sand, offer good drainage. The vines, planted between 1961 and 1997, are spread across three small parcels entirely dedicated to Chardonnay.
Vinification and Ageing
For the Mercurey 1er Cru "La Mission" Monopole 2024, the grapes are harvested by hand and sorted before being pressed as whole bunches. After cold settling, the juices are transferred to 228-litre Burgundy barrels, made in particular from oak from the forests of Burgundy, Allier and the Vosges, for alcoholic and malolactic fermentations. Ageing then continues in barrel, with around 15% new oak, before a period in tank prior to bottling.
Grape Variety
This wine is made exclusively from Chardonnay, which expresses itself fully on the limestone terroir of the La Mission climat.
