Food and wine pairings
This white Mercurey Village pairs beautifully with delicate fish, whether grilled or oven-baked, as well as shellfish. It is also an excellent match for poultry in cream sauce or slow-cooked dishes with mushrooms, and for risottos, and it finds a fine echo in pressed-curd or soft-rind cheeses.

The estate
The modern history of Château de Chamirey began in 1934, when the Marquis de Jouennes decided to bottle his wines at the estate for the first time. Located in Mercurey, in the Burgundian Côte Chalonnaise, the estate now covers 37 hectares, a large share of which is planted with premiers crus. It is run by Amaury and Aurore Devillard, the fifth generation of this Burgundy winemaking family, who also oversee all of Domaines Devillard. Château de Chamirey is distinguished by its ownership of two monopole premiers crus: Les Ruelles for red and La Mission for white.
The vineyard
This white Village from Château de Chamirey comes from several parcels scattered across the village of Mercurey, on clay-limestone soils with a predominance of limestone. This soil type gives the grapes tension and freshness, qualities the estate seeks to preserve during winemaking. The grapes are hand-harvested and hand-sorted in order to select the finest berries from this limestone terroir, typical of the appellation.
Winemaking and ageing
To produce the Mercurey Village 2024, the grapes are gently pressed, then the juice settles in tank for cold settling before fermentation begins. The wines are then aged partly in stainless steel tanks and partly in Burgundy barrels of lightly toasted French oak, sourced notably from the forests of Bourgogne, the Allier and the Vosges, for around ten months. This split between tank and barrel preserves the freshness of the fruit while adding a touch of aromatic complexity.
