This white wine reveals a pale yellow colour with subtle green hues, reflecting its youth and cool-climate freshness.
Nose
The aromatic bouquet opens with delicate notes of white flowers, fresh almond and light citrus touches reminiscent of lemon. With aeration, an underlying minerality, inherited from its terroir, reveals itself with elegance.
Palate
The attack is soft and supple, carried by a pleasant freshness. The palate offers a beautiful balance between a structuring acidity, fruity roundness and a finish of great mineral, crystalline purity.

The estate
Founded in 1973 by Aubert and Pamela de Villaine, Domaine de Villaine is located in Bouzeron, at the heart of the Côte Chalonnaise in Burgundy. A pioneer, the estate distinguished itself through its early commitment to organic farming in 1986, followed by the adoption of biodynamic methods. Today led by Pierre de Benoist, nephew of the founders, the estate spans around thirty hectares. It embodies a holistic and terroir-respectful vision, favouring controlled yields to produce wines of exceptional purity and quality.
The vineyard
The plots dedicated to producing this Bourgogne Côte Chalonnaise benefit from a privileged location on a south-facing slope in the Bouzeron valley. This optimal sun exposure, combined with natural protection from north winds, promotes even ripening of the grapes. The old vines thrive on a distinctive, predominantly limestone terroir, enriched with white marl and clay, giving the wine its distinctive mineral qualities and ensuring excellent natural drainage.
Winemaking and aging
True to the estate's minimalist philosophy, the making of the Bourgogne Côte Chalonnaise "Les Clous Aimé" 2022 involves as little technical intervention as possible. Primary fermentation takes place through the action of indigenous yeasts, followed by complete malolactic fermentation that brings roundness and freshness. The wine is then aged in traditional oak foudres for a period of 10 to 12 months. This choice of vessel allows the geological expression of the terroir to be concentrated while progressively refining the texture and aromatic complexity of the cuvée.
