The Estate
Born from the union of two families rooted in Burgundian winemaking history, the Domaine Bader-Mimeur embodies the legacy of Charles Bader, whose parents were wine merchants, and Élise Mimeur, descendant of Charles Mimeur, former owner of the prestigious Château de Chassagne-Montrachet.
The vineyard
This Burgundian estate spans 8 hectares within the Chassagne-Montrachet appellation, including 5 hectares directly connected to the Château de Chassagne-Montrachet. Pinot noir shares the land with Chardonnay, cultivated with an environmentally conscious approach in accordance with sustainable farming principles.
The wine
This Chassagne-Montrachet Red wine comes exclusively from vines located within the grounds of the Château de Chassagne-Montrachet, giving the wine full expression of this emblematic terroir.
Vinification and aging
The harvest is carried out by hand, followed by complete destemming. Spontaneous alcoholic fermentation takes place in conical wooden vats, with a maceration of about two weeks punctuated by manual punch-downs and pump-overs. The free-run wine is then racked and barreled by gravity, while the marc is gently pressed in a pneumatic press. Press wines are aged separately. Malolactic fermentation occurs naturally in barrels, with aging of 16 to 18 months in French oak barrels, 20 % of which are new wood.
