The property

The history of the estate dates back to 1984, when Didier Montchovet, a winemaker's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate while respecting the same philosophy, bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.

The vineyard

"Altitude 377" is a Bourgogne Hautes-Côtes de Beaune wine from the "Le Clou" plot in Nantoux. There, the soil is influenced by very white marl-type pebbles that can give it a poor appearance. But in reality, it is very rich in marly clays which provide the soil with excellent water supply.

Vinification and ageing

After careful manual harvesting, the perfectly ripe grapes are brought to the cellar to begin the vinification process. A gentle extraction with a significant proportion of whole harvest is carried out, then the wine ferments in wooden vats. Subsequently, the wine ages for 12 months in barrels, 30% of which are new.
