Tasting
Nose

The property
The history of the estate dates back to 1984, when Didier Montchovet, a winemaker's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate while respecting the same philosophy, bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots in the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.
The vineyard
This Bourgogne Hautes-Côtes de Beaune Altitude 2022 comes from the meeting of three plots located in Nantoux and Saint-Romain in Burgundy: "En Bignon" where the soil is clay-limestone, "Le Clou" characterised by its white limestone and significant pebble soil on yellow marls, and finally Les Pierres Percées.
Vinification and ageing
After careful hand harvesting, the perfectly ripe grapes are brought to the cellar to begin the vinification process. A gentle extraction with a small proportion of whole bunches is carried out, then the wine ferments in wooden vats. Subsequently, the wine ages for 12 months in barrels, 15% of which are new.
