Tasting
Colour
Of moderate intensity, the colour reveals a ruby red hue adorned with bright, translucent highlights.
Nose
The aromatic bouquet exudes scents of fresh red and black fruits, dominated by vibrant cherry. These are interwoven with mineral notes, white flowers, fresh herbs, and a subtle spicy touch.
Palate
With a medium body and a silky texture, the palate charms with its supple tannins and concentrated fruit. Showing lovely mineral freshness, it lingers into a persistent finish with saline and chalky accents.
Food and wine pairing
This red wine pairs beautifully with classic dishes such as beef bourguignon, grilled duck breast or braised lamb shank. It also pairs well with delicate fish like smoked salmon, mushroom-based vegetarian dishes, as well as mature cheeses such as Comté.

The estate
The story of Domaine Boris Champy began in 1984, when Didier Montchovet founded the estate in Nantoux, in Burgundy, with a half-hectare plot. A pioneer of organic viticulture, the estate obtained Demeter biodynamic certification as early as 1985. Over the decades, the vineyard expanded while maintaining its environmentally respectful philosophy. In 2020, oenologist Boris Champy took over the estate. Drawing on his varied experience, the current owner continues to uphold the estate's identity, showcasing the authentic expression of high-altitude terroirs through sustainable, low-intervention practices.
The vineyard
Located at an altitude of 377 metres, the Au Clou plot gives rise to this Bourgogne Hautes-Côtes de Beaune. This distinctive terroir stands out for its very stony soils, made up of white limestone pebbles resting on a clay-marl substrate. This geology provides excellent drainage while ensuring optimal water reserves. The cool microclimate linked to the altitude allows for slow ripening of the grapes, thereby preserving fine acidity. The vines are trained using the Guyot pruning method, with a density of around 10,000 vines per hectare, in full respect of local biodiversity.
The vintage
The 2023 growing season in Burgundy was marked by distinctive climatic conditions, differing clearly from the previous year. These weather variations required particular attention in the vineyard and rigorous selection during the harvest to pick grapes at their perfect physiological and phenolic ripeness.
Winemaking and ageing
Hand-harvesting is followed by a meticulous sorting process to retain only the finest bunches. The winemaking of the Bourgogne Hautes-Côtes de Beaune "Altitude 377 Le Clou" 2023 incorporates 80 to 100% whole clusters. Fermentation takes place naturally with indigenous yeasts in 228-litre oak barrels, without artificial temperature control. Ageing continues for around twelve months in once-used barrels, in order to preserve the freshness of the fruit, followed by a resting period in stainless steel tanks before bottling.
