Appearance
The wine reveals a deep ruby hue with cherry highlights and beautiful clarity.
Nose
The aromatic bouquet opens on notes of stone fruits, such as ripe peach and apricot, accompanied by floral touches of acacia and linden. It is then enriched with nuances of cedar, undergrowth and a delicate minerality. With aeration, aromas of spices and leather emerge.
Palate
From the first sip, the wine is fresh and vibrant, offering flavours of red and black fruits such as redcurrant, morello cherry and blackberry. The texture is round and juicy, perfectly supported by fine, silky tannins. The finish is long and persistent, marked by beautiful minerality along with subtle woody notes.
Food and wine pairings
This wine pairs wonderfully with traditional dishes such as coq au vin, feathered game or duck breast. It also goes very well with a fine cut of beef, a vegetarian tagine, mushroom-based preparations, as well as cow's milk cheeses such as Époisses or Langres.
Serving and cellaring
To fully appreciate the Bourgogne Hautes-Côtes de Beaune "Altitude" 2023, it is recommended to serve it at a temperature between 14 and 17°C, after a light aeration of 15 to 20 minutes. While it already offers great tasting pleasure today, this wine has a fine structure that will allow it to evolve favourably in the cellar and be enjoyed until around 2035.
The elegance and freshness of a Burgundy red wine
The estate
Founded in 1984 in Nantoux, Domaine Boris Champy is a pioneering estate of biodynamic viticulture in Burgundy. Taken over in 2019 by Boris Champy, the current owner, the vineyard extends over twelve hectares. Drawing on his international experience, this winemaker perpetuates a philosophy that respects nature. He enhances the high-altitude terroirs by creating true living ecosystems and encouraging rich biodiversity to produce authentic wines.
The vineyard
This Burgundy wine comes from vines planted between 300 and 500 metres in altitude. The cuvée is produced from a blend of two distinct plots: En Bignon, characterised by clay soils on a hard limestone bedrock, and Le Clou, which features chalky, gravelly white soils on yellow marl. The vineyard is farmed biodynamically, integrating rich polyculture with the presence of sheep for natural soil maintenance and the development of biodiversity.
The vintage
The 2023 vintage began with a mild winter followed by bud break in mid-April. A mild spring encouraged early flowering at the beginning of June. Despite an unstable summer marked by very localised hail episodes in July, the months of July and August offered consistent heat and sunshine. These conditions enabled rapid, optimal ripening of the grapes, leading to an early harvest between the end of August and the beginning of September.
Winemaking and aging
The grapes for the Bourgogne Hautes-Côtes de Beaune "Altitude" 2023 are hand-harvested at optimal ripeness. The winemaking favours a gentle approach with delicate pressing and the moderate integration of whole clusters. The process aims to preserve the aromatic clarity and natural freshness of the fruit, without excessive technical intervention.
