The freshness and tension of a high-altitude white Burgundy
The Estate
Founded in 1984 by Didier Montchovet in Nantoux, the estate established itself as a pioneer by becoming the first biodynamic-certified vineyard in Burgundy. In the late 2010s, the property was taken over by Boris Champy, a winemaker with extensive international experience. Renamed Domaine Boris Champy, the 14-hectare vineyard continues a deep commitment to agroecology and biodiversity preservation. Today, the current owner, Boris Champy, crafts high-altitude wines that reflect a minimalist philosophy and an absolute respect for natural cycles.
The Vineyard
Located at 382 metres in altitude in the commune of Nantoux, the "Montagne de Cras" lieu-dit is the birthplace of this Burgundy wine. This four-hectare plot devotes three hectares to vines and one hectare to biodiversity preservation, home to orchards, hedgerows and orchids. The vines, planted at high density on varied soils blending pebbles, limestone, marl and clay, benefit from a cooler climate that allows for slow grape ripening. The vineyard is farmed strictly according to biodynamic principles.
Winemaking and Ageing
Hand-harvesting ensures the grapes are picked at optimal ripeness. Vinification of this Bourgogne Hautes-Côtes de Beaune "Montagne 382" 2024 begins with spontaneous fermentations using indigenous yeasts in 228-litre Burgundian barrels. The wine is then aged on its lees for around twelve months, with a moderate proportion of new oak, followed by several months' rest in tank. The wine is bottled without fining, filtration or cold stabilisation.
