Appearance
The robe reveals a golden hue, leaning towards pale gold with subtle green highlights.
Nose
The nose opens with a beautiful freshness, revealing intense aromas of ripe yellow fruits and citrus, nuanced by indulgent hints of brown butter, vanilla and an underlying minerality.
Palate
Medium-bodied, the palate offers a creamy texture perfectly balanced by a crisp acidity. The whole is distinguished by a fine integration of the oak ageing and a saline precision that carries the wine towards a long finish.
Food and wine pairings
This white wine pairs ideally with flavourful fish, noble shellfish such as lobster or prawns, as well as white meats and poultry in creamy sauces. It also goes beautifully with goat's cheese, an aged Comté or a cooked foie gras.
Serving and cellaring
This Pouilly-Fuissé can be enjoyed in its youth for its vibrant fruit, but has the structure needed to evolve favourably in the cellar until around 2034.
The richness and tension of a Pouilly-Fuissé crafted by Domaine Cordier Père et Fils
The estate
Founded in 1945 in the heart of the Mâconnais, Domaine Cordier Père et Fils is a benchmark producer in Burgundy. Now led by Christophe Cordier, this family estate oversees a fragmented vineyard of 31.5 hectares spread across more than one hundred plots. Driven by a desire to reveal the identity of each terroir, the estate stands out for its highly precise viticulture, combining traditional methods with strong environmental practices, with full certification in organic and biodynamic farming since the 2024 harvest.
The vineyard
The grapes for this cuvée come from the Pouilly-Fuissé appellation, from plots located between the villages of Fuissé and Vergisson. Planted at an altitude ranging from 250 to 320 metres on clay-limestone soils, these old vines, aged between 50 and 80 years, benefit from meticulous management. The vineyard is worked according to biodynamic principles, including the use of animal traction, natural preparations applied on foot and a singular technique of braiding the foliage to protect the bunches from climatic hazards.
Winemaking and ageing
For this Pouilly-Fuissé Village "Vieilles Vignes" 2024, the grapes are harvested by hand at optimal ripeness. The whole bunches undergo a very gentle pressing before the juices are transferred by gravity. Fermentation starts spontaneously thanks to the indigenous yeasts. The wine then benefits from ageing on lees for around ten to twelve months in finely grained French oak barrels, toasted in-house by the estate. Bottling is carried out by gravity.
