Nose
The bouquet opens with aromas of red and black fruits, such as black cherry and blackberry, accompanied by notes of violet and undergrowth. With aeration, nuances of sweet spices, raw cocoa, smoke and cedar emerge, underpinned by a delicate mineral thread.
Palate
The palate offers a supple, seductive texture, supported by a silky, well-integrated tannic structure. The flavours of black fruits unfold with precision, balanced by vibrant acidity. The long, persistent finish stretches on into saline and mineral notes.
Food and wine pairing
This wine pairs perfectly with meats rich in umami, such as roasted feathered game (pheasant, wild duck) or slow-cooked dishes like beef bourguignon. It is also a wonderful accompaniment to full-flavoured, matured cheeses, such as Époisses or Comté.
Service and storage
To fully appreciate this Bonnes-Mares Grand Cru 2023, it is recommended to serve it at a temperature of between 15 and 16°C, taking care to decant it for about an hour if enjoyed in its youth. This wine, built for ageing, can be kept in the cellar to develop until around 2060.

The authentic expression of a Burgundy Grand Cru from Domaine de la Vougeraie
The estate
Founded in 1999 by Nathalie and Jean-Charles Boisset, Domaine de la Vougeraie is located in Prémeaux-Prissey, in the heart of Burgundy, France. This estate, spanning around forty hectares, brings together a heritage of vines cultivated according to the principles of biodynamics. Today, under the vision of Jean-Charles Boisset and the general management of Sylvie Poillot, the estate is dedicated to revealing the identity of each plot through viticulture that respects living organisms and precise winemaking, thereby illustrating the richness of Burgundy's terroirs.
The vineyard
The Bonnes-Mares plot covers 0.70 hectares in the southern part of the appellation, in the commune of Chambolle-Musigny. Protected by the rocky outcrops of a former quarry, the vines, planted between 1901 and 1998, thrive on limestone soils covered with iron-rich clay, known as "terres rouges". The vineyard's management is certified organic and strictly follows the lunar calendar.
The vintage
The year 2023 began with early spring frosts, followed by a hot, dry summer. Timely rainfall in the middle of the summer season helped to ease water stress and preserve the acidity of the berries. The harvest took place under favourable conditions, producing grapes in impeccable health.
Winemaking and ageing
The grapes intended for this Bonnes-Mares Grand Cru 2023 are hand-harvested in small crates, then meticulously sorted. Fermentation, carried out with indigenous yeasts in wooden vats, includes a proportion of whole bunches. After a cold pre-fermentation maceration, regular punching down and pumping over are carried out. Ageing takes place over 12 to 18 months in oak barrels from the Cîteaux forest, 20% of which are new. Bottling is done by gravity, during the waning moon phase.
