Tasting notes
Appearance
The colour is an intense, deep and particularly brilliant red.
Nose
Initially discreet with subtle earthy notes, the bouquet opens up with aeration to reveal crisp red fruit aromas, dominated by fresh cherry, all underscored by a delicate touch of peppermint.
Palate
Full-bodied and beautifully long, the palate seduces with its harmonious structure, showcasing elegant, perfectly integrated tannins.
Food and wine pairing
This red wine pairs perfectly with meat dishes in sauce such as beef bourguignon or braised beef cheek. It will also go wonderfully with a meat pie, a pork tenderloin with herbs, or a board of mature cheeses such as Brie, Camembert and Comté.
Serving and cellaring
For optimal enjoyment, this Bourgogne 2022 is best served at a temperature of between 13 and 14°C. Although it already offers plenty of pleasure today, its structure gives it excellent ageing potential, allowing it to be cellared until around 2032.
The elegance and depth of a red Burgundy wine
The estate
Located in Premeaux-Prissey, at the heart of the Côte de Nuits in Burgundy, Domaine des Perdrix is a benchmark estate. Although its vines have existed for much longer, its contemporary history truly began when it was taken over in 1996 by the Devillard family, winegrowers for five generations and the current owners. Spanning around 15 hectares, the vineyard stands out for its high proportion of Premier and Grand Cru plots. The estate is now recognised worldwide for its exacting philosophy, producing wines that combine power, elegance and a sincere expression of terroir.
The vineyard
This Burgundy wine is crafted from a blend of several plots covering 1.98 hectares. Planted between 1956 and 1965 at a high density of 10,000 vines per hectare, these old vines thrive on clay-limestone soils with a predominantly clay composition. The estate favours sustainable viticulture that respects the environment, with entirely manual harvesting allowing for rigorous sorting of the grapes.
The vintage
2022 was marked by hot, dry weather conditions in France. This climate encouraged excellent phenolic ripeness in the grapes, while maintaining a fine balance thanks to the deep root systems of the old vines, which prevented any excess richness.
Winemaking and ageing
After complete destemming, the grapes undergo a 4- to 6-day cold pre-fermentation maceration. Alcoholic fermentation then begins naturally thanks to indigenous yeasts, with a total vatting period of around 15 days. The press wine and free-run juice are carefully separated. This Bourgogne 2022 is aged for 11 months in 228-litre Burgundian barrels (8% new oak), before finishing with a 5-month harmonisation period in tank.
