A complex and elegant Echezeaux Grand Cru by Domaine des Perdrix
The estate
Located in the Côte de Nuits, in Nuits-Saint-Georges, Domaine des Perdrix has belonged to the Devillard family since 1996. Stemming from an exceptional terroir and carrying out a rigorous management of the vineyard and a skillful vinification process, the wines by Domaine des Perdrix are among the finest in Burgundy.
The wine
This Échezeaux Grand Cru 2018 by Domaine des Perdrix comprises grapes from two plots, Échezeaux du dessus and Les Quartiers de Nuits, which grow the highest quality grapes in the appellation. The vineyard is composed of clay-limestone soils, mostly of clay.
Vinification and ageing
Harvested and sorted by hand, 40% of the grapes are vinified as whole grapes. Cold pre-fermentation maceration for 4 to 6 days to extract the phenolic compounds. Alcoholic fermentation with wild yeast, followed by 15 days of additional maceration with punching of the cap without pumping over to favour the concentration of tannins, aromas and colour. Separation of the press juice and free-run juice. The wine is aged for 18 months in traditional Burgundy 228-litre barrels, 80% of which are new, along with a further 2 months in vats.

The tasting
Colour
The colour is a beautiful ruby red with purple hues.
Nose
The nose combines intense black fruit fragrances with savoury notes of cinnamon and pepper.
Palate
Full and generous, the palate is seduced by this wine’s length, its tannic structure as well as its acidulous and aromatic finish (black fruits, dark chocolate, pepper).
Service
For an optimal tasting experience, it is recommended to open the bottle a few hours before tasting and to decant the wine if possible.
Cellaring
This fine Burgundy wine can be kept in the cellar until about 2038 in order to develop its full range of aromas.
Food and wine pairing
