Tasting Notes and Serving Suggestions for the 2024 Givry Village "Le Petit Cellier" from Domaine du Cellier aux Moines
Tasting
Appearance
The colour reveals a brilliant ruby hue, adorned with delicate violet highlights.
Nose
The aromatic bouquet opens with vibrant notes of red fruits, such as raspberry, cherry and candied pomegranate. This is delicately enhanced by floral touches of rose and violet, along with subtle spicy and earthy nuances.
Palate
Wonderfully fresh, the palate offers a supple texture and medium body. Silky, smooth tannins accompany a lingering finish, revealing a profile that is both generous, joyful and elegant.
Food and Wine Pairing
This red wine pairs wonderfully with rich fish such as roasted or grilled salmon. It will also beautifully complement roasted poultry, delicate white meats or a fine charcuterie board.
Serving and Ageing
Approachable in its youth to enjoy its vibrant fruit, this 2024 Givry Village "Le Petit Cellier" also possesses the structure needed to age favourably in the cellar for several years, gaining further depth over time.
The Excellence of Burgundy at Domaine du Cellier aux Moines
The Estate
Founded in its current form in 2004 by Philippe and Catherine Pascal, Domaine du Cellier aux Moines spans 12 hectares in Burgundy. While the historic planting of the vines by Cistercian monks dates back to the twelfth century, it is now the Pascal family, supported by technical director Guillaume Marko, who runs the estate today. Certified organic and biodynamic, this domaine stands out for its innovative gravity-flow winery and its commitment to producing pure wines that faithfully express their terroirs.
The Vineyard
Located within the Givry appellation, the plots dedicated to this wine come from the estate's youngest vines. To promote genetic diversity and ensure perfect adaptation to the limestone terroir of the Côte Chalonnaise, all of these vines were replanted using the demanding massale selection method.
Winemaking and Ageing
In crafting the 2024 Givry Village "Le Petit Cellier", the grapes are entirely destemmed to ensure a smooth texture and silky tannins. Fermentation is carried out gently to preserve the brightness of the fruit. The wine is then aged exclusively in used oak barrels, avoiding any excessive woody influence in order to maintain aromatic purity.
Grape Variety
100% Pinot Noir.
