Tasting notes
Appearance
The colour reveals a deep, dark hue, enhanced by delicate purple and violet highlights.
Nose
Wonderfully complex, the aromatic bouquet opens with intense scents of black fruits such as blackberry and black cherry, mingled with notes of red fruits and citrus. The whole is lifted by floral touches of violet, mineral nuances of graphite, as well as subtle spicy, toasted and cedar notes.
Palate
The palate offers a rich, concentrated texture, supported by ripe, abundant tannins. Blessed with lovely freshness and remarkable energy, this wine lingers on a long, persistent and harmonious finish.
Food and wine pairing
This red wine pairs beautifully with full-flavoured meats such as grilled beef rib, a navarin of lamb or a lamb tagine with prunes. It will also enhance refined dishes such as roasted pigeon with spices or matured pressed-cooked cheeses.
Serving and cellaring
To fully appreciate this Hermitage 2022, it is best served at a temperature of between 16 and 18°C, decanting it at least two hours before tasting. This wine for laying down can be enjoyed now, but will continue to develop in the cellar until around 2035.
The elegance and power of a great red wine from the Hermitage appellation
The estate
Located in France, in the northern Rhône Valley, Domaine du Colombier is a family-run estate whose winemaking history dates back to the 1920s. However, its true founding as an estate-bottling domain took place in 1991. Today, the property is run by brothers Florent and David Viale. At the helm of a vineyard spanning sixteen to eighteen hectares split between Tain-l'Hermitage and Mercurol-Veaunes, they craft authentic wines, renowned for their faithful expression of terroir and their environmentally responsible approach.
The vineyard
The grapes used for this Hermitage appellation wine come from the prestigious terroirs of Beaume and Les Diognières. The vines, around sixty years old, are planted at high density on hillside slopes with sandy, gravelly soils made up of small stones. Farmed using methods close to organic viticulture, the vineyard is trained using the échalas (single-stake) method. Harvesting is carried out entirely by hand to preserve the quality of the berries.
The vintage
2022 brought particularly favourable weather conditions to the region. This benevolent climate allowed the berries to reach optimal ripeness without suffering from excessive heat, ensuring a perfect balance between aromatic richness and freshness.
Winemaking and ageing
After destemming half of the harvest, the Hermitage 2022 is vinified over a three-week period in temperature-controlled vats. The wine is then aged with great care for eighteen months in French oak demi-muids, around a third of which are new, allowing its structure to be gently refined.
