Tasting
Colour
This white wine from France reveals a golden hue, clear and endowed with real brilliance.
Nose
Expressive, the bouquet exhales generous aromas of stone fruit such as mango, yellow peach and mirabelle plum, subtly refreshed by notes of lemon zest and stewed apple.
Palate
Rich and unctuous, the palate offers a creamy texture perfectly balanced by a lovely acidity that brings freshness. The palate unfolds with delicious flavours of white peach and apple, extending into a harmonious and well-proportioned finish.
Food and wine pairing
Ideal from the aperitif onwards, this wine pairs wonderfully with fish-based starters, a shrimp and avocado salad, or grilled white fish. It will also perfectly accompany seafood such as oysters and scallops, as well as fresh or matured goat cheeses.
Service and storage
To fully appreciate this Mâcon-Solutré 2022, it is recommended to serve it at a temperature between 12 and 13°C, without prior aeration. This wine can be enjoyed now and will continue to evolve favourably until around 2027.

The estate
Located in Burgundy, facing the famous Roche de Solutré, Domaine du Roc des Boutires was created in its current form in 2016 following its acquisition by the Parinet family. Now run by Édouard and Jean-Jacques Parinet, the estate spans 4.2 hectares. The domaine stands out for its meticulous plot-by-plot approach and its respect for winemaking traditions. In a short space of time, it has established itself as a serious reference in its region, combining modern precision with the enhancement of an exceptional historic terroir.
The vineyard
The grapes used for the Mâcon-Solutré come from vines averaging 45 years of age, spread across the climats Au Mont and Aux Combes. Located between 210 and 430 metres in altitude, this terroir benefits from an ideal east-west exposure. The soils are composed of Jurassic limestone mixed with clay, schist and marl. The vineyard is cultivated using traditional methods, with soil management that excludes systemic herbicides, and the harvest is carried out by hand.
The vintage
The year was marked by hot and dry weather conditions. After an early rise in temperatures in February and a slight frost episode in April with no consequences for the vines, the summer proved to be one of the hottest since 1947. Although rainfall was below average, the rains in June helped avoid severe water stress, leading to an early harvest in early September.
Winemaking and aging
Upon arrival at the winery, the whole clusters of the Mâcon-Solutré 2022 are pressed by gravity. The must then undergoes cold settling before beginning a spontaneous fermentation using indigenous yeasts, in temperature-controlled stainless steel tanks. Malolactic fermentation also occurs naturally. Aging continues exclusively in stainless steel tanks on total lees for ten months, with no time in wood, in order to preserve the freshness and vibrancy of the fruit.
