The property
Located in the heart of Burgundy, the Domaine Laroche is an emblematic reference of Chablis, with a heritage dating back to the 9th century. With 90 hectares of vineyards exclusively classified as Premiers and Grands Crus, the estate is committed to demanding agro-ecological viticulture. Integrated into the Advini group since 2009, it stands out for its wines of great finesse, with intense aromatics and the crystalline expression of the Chablis terroirs.
The vineyard
The Chablis 1er Cru "Les Butteaux" comes from a place called located in the Montmains climate, on the left bank of the Serein. This plot benefits from a particularly favorable west exposure and rests on the famous Kimmeridgian limestone soil, characteristic of the great Chablis. Its position on the upper part of a hill (the butte) gives it unique characteristics that are found in the mineral expression and the finesse of the wine.
Vinification and aging
To produce this Chablis 1er Cru "Les Butteaux", the harvest is carried out manually in the cool of the morning, thus ensuring the preservation of the aromas. The bunches are subject to meticulous manual sorting on a sorting table to eliminate undesirable plant residues. The whole bunches are pressed in a pneumatic press, followed by a rest of the must for 12 hours.
