The estate
An iconic figure of Chablis, Domaine Laroche traces its origins back to a millennial heritage, dating back to the 9th century. Since joining the Advini group in 2009, it has perpetuated a tradition of high standards and precision, producing wines of remarkable elegance. Each cuvée highlights the uniqueness of the Chablis climats, through respectful viticulture and custom vinification.
The vineyard
The Grand Cru "Les Blanchots" is located to the east of the mythical hill of Grand Crus. Its soil, typical of the Kimmeridgian, combines marl rich in marine fossils and white clay, giving the wines an intense mineral framework and a chiseled texture. Of the 12.7 hectares that make up this cru, the estate farms 4.56, oriented east/south-east. This privileged exposure, which captures the first rays of the sun, favors slow and homogeneous ripening of the grapes, giving rise to complex and structured Chablis wines, imbued with freshness.
The vintage
The 2023 vintage in Burgundy is characterized by its generosity and high quality. The year required vigilant protection against climatic and sanitary pressures from late winter to spring. A heatwave in late August reversed trends, leading to rapid ripening of the berries. The harvest took place from September 7th for the Premiers and Grands Crus until September 21st for the Chablis. The wines reveal rich and balanced aromatics, with a potential comparable to the 2020 vintage and satisfactory yields.
Winemaking and aging
The harvest of the Chablis Grand cru "Les Blanchots La Réserve de l'Obédience" 2023 is carried out manually, with sorting of the bunches at the entrance to the winery. Pneumatic pressing is carried out at low pressure, the juice fractions are separated and only the heart of the press is kept, ensuring gentle extraction. Alcoholic and malolactic fermentations take place entirely in French oak barrels in the historic cellars of the Obédiencerie in Chablis. The use of wood aims to structure the wine while minimizing overt woody notes, in order to purely express the aromas of the Chardonnay. Aging continues from fermentation until bottling, for a maximum duration of 18 months. Since 1991, this cuvée has constituted a unique blend of the best selections from Les Blanchots, created at the beginning of summer in the historic cellar. This limited edition of a few thousand bottles is produced each year.
