The estate
An emblematic figure of Chablis, Domaine Laroche has its origins in a thousand-year-old heritage, dating back to the 9th century. Since joining the Advini group in 2009, it has perpetuated a tradition of high standards and precision, producing wines of remarkable elegance. Each cuvée highlights the uniqueness of the Chablis climates, through respectful viticulture and custom vinification.
The vineyard
The Les Clos climate, the largest in the Chablis appellation with its 26 hectares, stretches opposite the eponymous village, covering the entire hillside from bottom to top. Benefiting from a south-west exposure, the vineyard enjoys generous sunshine from noon until evening, favoring optimal ripeness of the grapes. The soils are composed of Kimmeridgian limestone and very pure Kimmeridgian marl. The top of the slope has a stony character while the bottom reveals deeper, clayey soils. This gentle, continuous slope offers ideal conditions for the expression of Chardonnay in this exceptional Chablis terroir.
The vintage
The 2023 vintage in Burgundy is characterized by its generosity and high quality. Considerable work was carried out in the vineyards from winter to spring to manage climatic and sanitary pressures. The heat at the end of August caused rapid ripening of the grapes. The harvest took place from September 7th for the Premiers and Grands Crus until September 21st for the Chablis. Despite these conditions, freshness and minerality were preserved, with the first juices revealing richness and balance. The satisfactory yields and the potential of the vintage recall that of 2020.
Winemaking and aging
Harvesting is done manually, followed by hand sorting at the estate. Pneumatic pressing is carried out at low pressure with separation of the juice fractions, with only the heart of the press being retained to ensure quality. After settling for 12 hours at 12-15°C in large vats for natural sedimentation, alcoholic and malolactic fermentations take place entirely in French oak barrels in the historic cellars of the Obédiencerie in Chablis. The barrels used, aged 1 to 7 years, have varied capacities of 228, 300, 400, 500 and 600 liters. This approach aims to structure the Chablis Grand Cru "Les Clos" 2023 with wood while minimizing marked woody characters, thus preserving the pure and precise expression of the Chardonnay. Aging continues for up to 16 months between fermentation and bottling.
