Nose
The nose reveals concentrated aromas of black fruits, marked by a dark and deep character, accompanied by subtle wild and rustic notes that give it a unique identity.
Palate
The attack proves silky before giving way to an assertive structural presence. The tannins, ripe and perfectly integrated, support a rich and powerful palate. The aromatic evolution offers notes of very ripe, almost stewed fruit, which glide towards fresher, more elegant and delicately spiced touches. The whole delivers a remarkable balance between power and refinement, extending into a long finish.
Food and wine pairing
This wine pairs wonderfully with grilled or roasted red meats, as well as herb-infused lamb dishes. The estate
Founded in 1997, Domaine Nicolas Rossignol spans approximately 17 hectares in the heart of Burgundy, primarily on the Côte de Beaune. Representing the fifth generation of winemakers in his family, Nicolas Rossignol is the current owner and head of the estate. After merging with the family property in 2011 and relocating his facilities to Beaune, he continues to uphold traditional expertise combined with modern infrastructure. The estate stands out for its biodynamic-inspired approach, meticulous soil work, and a strong commitment to showcasing the unique expression of each plot.
The vineyard
This Bourgogne wine comes from a historic plot named Crenilles, ideally located near the Château de Pommard. This exceptional terroir stands out for its very old vines planted in 1922, derived from ancient massale selections dating back to the pre-phylloxera era. The brown soils, shallow but rich in minerals, are composed of silt and numerous limestone stones. This particular geology forces the roots to draw their nutrients from deep below, giving the grapes remarkable concentration and mineral dimension.
The vintage
The year 2022 offered particularly favourable climatic conditions. After a mild, dry winter that encouraged early budbreak, the vineyard was relatively spared from the April frost episodes. Flowering took place quickly and early, at the end of May. Although the summer proved scorching, timely rainfall at the end of June and again in mid-August helped avoid water stress, ensuring optimal ripening of the berries until harvest, which began at the end of August.
Winemaking and ageing
The grapes are harvested exclusively by hand, followed by a rigorous double sorting. For the Bourgogne "Cuvée l'Héritière" 2022, the winemaking process incorporates a significant proportion of whole clusters, amounting to 50%. Fermentation begins spontaneously thanks to indigenous yeasts. Ageing continues on fine lees for ten to twenty months, with malolactic fermentation delayed until the following spring. The use of new barrels remains moderate, between 15 and 20%, in order to preserve the identity of the terroir. Finally, bottling takes place without any fining or filtration.
