The estate
Founded in 1991 by Paris Sigalas from his grandfather’s family vineyard, Domaine Sigalas has established itself as a Santorini benchmark. Located in Oia on volcanic soils, the estate has cultivated its vines organically since 1994, using the traditional kouloura technique to protect the vines from the Cyclades’ strong winds. With exceptionally low yields, Paris Sigalas produces wines of remarkable minerality, combining ancestral know-how with modern technology.
The vineyard
The vines are planted on selected plots across the island of Santorini, on the volcanic soils characteristic of this PDO appellation. These vines, over 60 years old, benefit from the island’s exceptional terroir, giving the wine its distinctive minerality and aromatic complexity.
Winemaking and aging
The Assyrtiko 2024 grapes are hand-sorted and gently pressed in whole clusters. Fermentation takes place in stainless steel tanks at controlled temperature, followed by aging on lees for at least 4 months with regular bâtonnage to develop the wine’s aromatic complexity and creamy texture.
Grape variety
100% assyrtiko.
