Tasting
Colour
A brilliant pale gold hue, enhanced by greenish highlights typical of its youth, characterises this white wine.
Nose
The aromatic bouquet reveals notes of citrus fruit, particularly lemon and grapefruit, accompanied by hints of fern and an iodised minerality. On aeration, delicate scents of white flowers and coriander emerge.
Palate
The palate is lively and supple. Dry and fruity, it is supported by a refreshing acidity and a pronounced mineral backbone. The finish is long, pure and refined.
Food and wine pairing
This wine pairs perfectly with seafood such as langoustines, scallops or lobster, as well as with fish like turbot. It also goes very well with poultry in cream sauce, or can simply be enjoyed as an aperitif.
Service and storage
For an optimal tasting experience, it is recommended to serve this 2022 vintage at a temperature of between 12 and 13°C. It can be enjoyed now and will continue to evolve favourably until around 2028, or even until 2030 if stored under optimal conditions.
The pure, mineral expression of a Burgundian terroir
The estate
Founded in 1880 in Beaune, Maison Joseph Drouhin has established itself as a major reference. In the 1960s, Robert Drouhin took part in the revival of the Chablis vineyards by acquiring the Moulin de Vaudon. Today, the fourth generation carries on this heritage. The Drouhin Vaudon estate stands out for its pioneering commitment: it is one of the largest in the appellation to be farmed biodynamically. With deliberately limited yields, the estate produces cuvées renowned for their purity and the authentic expression of their terroir.
The vineyard
The vines that give rise to this wine flourish in the Vauvillien valley, ideally situated between the Premier Cru vineyards of Montée de Tonnerre and Mont de Milieu. The terroir is characterised by steep slopes and Kimmeridgian limestone soils, rich in marine fossils, which give the wine its distinctive minerality. The vineyard is entirely cultivated according to the principles of organic and biodynamic farming.
The vintage
2022 offered particularly favourable weather conditions for growing vines. The growing cycle allowed the berries to reach excellent ripeness while retaining fine acidity, resulting in an ideal balance between sugar accumulation and the fruit's natural freshness.
Winemaking and aging
After the grapes are harvested by hand or machine, whole clusters are pressed slowly and gently in a pneumatic press. The press juice is separated from the free-run juice to preserve the purity of the aromas. After settling, fermentation takes place in temperature-controlled stainless steel tanks. The wine is then aged in these same tanks for a period of seven to ten months, with no time spent in oak barrels, in order to preserve the terroir's full freshness and mineral identity.
