Decanter

The Gevrey Combottes is once again a standout in the Dujac lineup. A discreet and subtle wine, the fruit ripeness is impressive, but it starts slightly closed and really opens on the palate with aromas of pomegranate, kirsch, and violets. The structure is impressive, with tannin that is at once firm but also very fine-grained and elegant. The density is rewarding, and the finish lingers on the palate. The grapes are from their 1.16-hectare site and are fermented as mostly whole clusters before ageing in cask.

Cask sample. Mid ruby. Interesting – a whiff of fresh celery on the nose. Ripe raspberry and cherries with a distinct violet note. On the palate, riper, thicker, with a luxuriant texture again. Cool mineral notes and a touch of salt on the mid-palate and through to the finish. (MH)

The typicity of a Gevrey-Chambertin wine

The property

The Domaine Dujac, founded in 1968 by Jacques Seysses, is located in Morey-Saint-Denis in Burgundy. A wine enthusiast, Jacques left the family business to dedicate himself to viticulture, acquiring the Graillet estate which he renamed Domaine Dujac. Today, the second generation, represented by his sons Jeremy and Alec, as well as Diana, Jeremy's wife, perpetuates the family tradition.

The vineyard

The vineyard of Domaine Dujac has gradually expanded from 5 hectares in 1968 to 15.5 hectares in 2005, covering prestigious Burgundy appellations in Côte de Nuits and Côte de Beaune. Committed to sustainable viticulture, the estate obtained organic farming certification in 2011 and has integrated biodynamic practices since 2003. The vines are cultivated without herbicides, with soils worked by plough and particular attention paid to biodiversity, reflecting a philosophy of respect and preservation of the terroir.
