Tasting
Appearance
A deep ruby colour, marked by a beautiful youthfulness.
Nose
Rich and intense, it reveals a fruity bouquet dominated by aromas of blackberry, blackcurrant, cherry and plum, subtly enhanced by spicy notes.
Palate
Ample, round and structured, it offers a smooth, velvety texture. The tannins are firm yet perfectly integrated, leading to a long, lingering finish on flavoursome notes of juicy black fruits.
Food and wine pairings
This Port pairs wonderfully with characterful cheeses such as a farmhouse cheddar or blue cheeses. It also enhances desserts featuring dark chocolate or red fruits, and can even accompany barbecue dishes. For a more original approach, it fits perfectly into sophisticated cocktails.
Serving and cellaring
The Bin No 27 is ready to be enjoyed now and requires no decanting. It is recommended to serve it at a temperature between 16ºC and 18ºC. Once opened, the bottle can be kept for up to two months if stored upright, away from light and at a cool, constant temperature.
A rich and emblematic Port from Fonseca
The estate
Founded at the beginning of the 19th century by Manuel Pedro Guimaraens, Fonseca is located in Vila Nova de Gaia. Now owned by the Fladgate Partnership, the estate carries on its family heritage with David Guimaraens as cellar master. A pioneer in sustainable viticulture in the Duriense region, the House notably launched the first Port made from organic grapes in 2006.
The vineyard
The grapes used for this Vintage Port come from the House's own estates, located in the prestigious sub-region of Cima Corgo, in the Douro Valley. Among these exceptional terroirs are Quinta do Panascal and Quinta do Cruzeiro, vineyards renowned for offering optimal conditions for grape growing.
Winemaking and ageing
The making of Bin No 27 relies on an innovative technology that replicates traditional foot treading, allowing the best to be extracted from the grapes without crushing the bitter pips. This Port then benefits from four years of ageing in neutral wooden vats before bottling, which gives it great complexity while preserving its freshness.
This cuvée is the result of a meticulous blend of reserve wines, rigorously selected for their deep colour and the intensity of their fruity profile.
